Description

This Tropical Pineapple Chicken & Rice Delight is a vibrant and flavorful dish that combines tender chicken breast with sweet pineapple chunks and colorful bell peppers, all tossed in a savory soy sauce. It’s a quick and easy recipe perfect for a balanced, tropical-inspired meal that can be prepared in just 40 minutes.

Ingredients

Scale

Chicken and Vegetables

  • 1 lb chicken breast, diced
  • 1 cup diced bell peppers (red, green, yellow mix)
  • 1 can (20 oz) pineapple chunks in juice, drained

Rice

  • 1 cup uncooked white rice

Seasonings and Oils

  • ½ cup soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder

Instructions

  1. Cook the Rice: In a saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15–20 minutes until tender and fluffy. Set aside.
  2. Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken and season with garlic powder. Cook until chicken is golden brown and fully cooked through, about 6–8 minutes.
  3. Add Bell Peppers and Pineapple: Stir in the diced bell peppers and drained pineapple chunks. Cook for 5 minutes until the veggies are tender and pineapple is warmed through.
  4. Add Soy Sauce: Pour in the soy sauce and stir everything together. Let simmer for 2–3 minutes so the flavors combine.
  5. Combine with Rice: Add the cooked rice to the skillet and stir until evenly mixed and heated through.
  6. Serve: Remove from heat and garnish with chopped green onions, cilantro, or sesame seeds if desired.

Notes

  • For extra flavor, marinate the chicken in soy sauce and garlic powder for 30 minutes before cooking.
  • You can use brown rice instead of white rice; adjust cooking time accordingly.
  • To make it spicier, add some red pepper flakes or chopped fresh chili when sautéing the chicken.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
