Ingredients
Scale
Crust and Chocolate Layer
- 1 pre-made graham cracker crust (9-inch)
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup butter
Caramel Pecan Topping
- 1/2 cup brown sugar, packed
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups pecans, chopped
Garnish (Optional)
- 1/2 cup whipped cream
- 1/4 cup chocolate shavings
Instructions
- Heat the cream: In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer, ensuring it doesn’t boil to avoid scorching.
- Melt chocolate and butter: Add the semi-sweet chocolate chips and butter to the hot cream, stirring constantly until the mixture is smooth and fully combined. Remove from heat and let cool for 10 minutes.
- Fill crust and chill: Pour the chocolate mixture into the pre-made graham cracker crust, spreading it evenly. Place the pie in the refrigerator to chill for 2 hours, or until the chocolate layer is set.
- Prepare caramel sauce: In another saucepan, combine the brown sugar, light corn syrup, vanilla extract, and salt. Cook over medium heat, stirring constantly until the sugar dissolves and the mixture starts bubbling.
- Add pecans: Stir in the chopped pecans and cook for 1 to 2 minutes until the nuts are fully coated and the caramel thickens slightly.
- Cool caramel and top pie: Remove the caramel-pecan mixture from heat and let it cool for 5 minutes. Then pour it evenly over the chilled chocolate layer on the pie.
- Final chill: Return the pie to the refrigerator to chill for an additional 1 hour or until the caramel layer is firm and set.
- Garnish and serve: Just before serving, optionally top the pie with whipped cream and chocolate shavings for an extra indulgent finish.
Notes
- Make sure not to let the heavy cream boil when heating to avoid burning the chocolate.
- The pie requires a total chilling time of about 3 hours to achieve the perfect consistency.
- You can substitute pecans with walnuts if preferred, maintaining the classic turtle flavor profile.
- Use good quality semi-sweet chocolate chips for the best taste and texture.
- If desired, the pie can be prepared a day in advance and kept refrigerated, covered tightly with plastic wrap.
