Description

This Sweet Potato, Feta & Caramelised Onion Tart is a delightful blend of sweet roasted sweet potatoes, savory caramelized onions, and tangy feta cheese atop a flaky puff pastry crust.   • 1 tsp brown sugar
  • 4 oz feta cheese, crumbled
  • 1 tsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure the tart doesn’t stick and is easy to remove after baking.
  2. Roast Sweet Potatoes: Toss the thinly sliced sweet potatoes with olive oil, salt, and black pepper to season. Spread them on the prepared baking sheet and roast for 20 minutes until tender and slightly caramelized. Remove and set aside.
  3. Caramelize Onions: In a skillet over medium heat, melt the butter and add the thinly sliced onions. Cook gently until the onions soften, then sprinkle with brown sugar and continue cooking for about 15 minutes until the onions turn golden and caramelized. Remove from heat and set aside.
  4. Prepare Puff Pastry: Lightly flour a surface and roll out the puff pastry sheet slightly to even the thickness. Place the pastry sheet on the parchment-lined baking sheet. Using a knife, score a 1-inch border around the edges carefully without cutting all the way through to create a raised edge that will hold the toppings.
  5. Assemble Tart: Spread the caramelized onions evenly within the scored border of the pastry. Arrange the roasted sweet potato slices on top of the onions. Sprinkle the crumbled feta cheese evenly over the sweet potatoes and scatter fresh thyme leaves for an aromatic finish.
  6. Egg Wash and Bake: Brush the exposed pastry border with the beaten egg to help it turn golden and glossy during baking. Place the tart in the preheated oven and bake for 20 to 25 minutes, or until the puff pastry is puffed up and golden brown.
