Ingredients
Scale
Fritter Batter
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ cup milk
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- 2 medium apples, peeled, cored, and diced
- Vegetable oil, for frying (2–3 inches deep)
Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk the milk, eggs, and optional vanilla extract until fully combined. Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined to avoid overmixing. Fold in the diced apples evenly throughout the batter.
- Heat the Oil: In a deep skillet or large pot, pour 2 to 3 inches of vegetable oil and heat it over medium. Use a thermometer to bring the oil temperature to 350°F (175°C), ensuring consistent heat for proper frying.
- Fry the Fritters: Using a large spoon or ice cream scoop, carefully drop heaping tablespoons of batter into the hot oil, avoiding overcrowding. Fry each fritter for 2 to 3 minutes per side, flipping gently with a slotted spoon or tongs until they turn golden brown and are cooked through. Remove fritters and place them on paper towels to drain excess oil.
- Make the Vanilla Glaze: In a small bowl, whisk powdered sugar, milk, and vanilla extract together until smooth. Adjust the consistency by adding more milk for a thinner glaze or more powdered sugar for a thicker glaze as desired.
- Glaze the Fritters: While the fritters are still slightly warm, drizzle the vanilla glaze over them or dip each fritter fully into the glaze for thorough coating. Allow the glaze to set for a few minutes before serving.
Notes
- Ensure oil temperature stays around 350°F for even frying and to prevent soggy fritters.
- Do not overcrowd the pan to maintain oil temperature and achieve crispness.
- Use tart apples like Granny Smith for a nice balance of sweetness and tartness.
- The glaze can be adjusted to preference; thinner for drizzling or thicker for dipping.
- Consume fritters shortly after frying for best texture and flavor.
