  • 2/3 cup Greek yogurt
  • Remaining Homemade Simple Syrup (approx. 2/3 cup)

Simple Syrup (Homemade)

  • 1 cup sugar
  • 1 cup water


Instructions

  1. Prepare Simple Syrup: In a small saucepan, combine 1 cup sugar and 1 cup water. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and allow to cool completely before using.
  2. Prepare Mango Mixture: Peel and chop 2 large mangoes. Place the mango pieces in a blender, add 1 tablespoon of the simple syrup, and blend until smooth and creamy. Transfer to a bowl and mix in 1/3 cup Greek yogurt and the remaining simple syrup for the mango mixture. Whisk thoroughly to combine.
  3. Prepare Yogurt Mixture: In a separate bowl, combine the remaining 2/3 cup Greek yogurt with simple syrup (approximately 2/3 cup). Whisk the mixture until smooth and well combined.
  4. Assemble Popsicles: In popsicle molds, alternate pouring layers of the mango mixture and yogurt mixture to create a striped effect. Fill molds to the top.
  5. Freeze: Place the filled molds in the freezer for 4 to 5 hours or until the popsicles are fully set and solid.
