Instructions
- Sauté Vegetables: In a skillet over medium heat, heat the olive oil. Add the thinly sliced onion and green bell pepper and sauté until softened and slightly caramelized, about 7–8 minutes. Season the mixture with garlic powder, salt, and pepper to taste.
- Assemble Roll Ups: Lay the slices of roast beef flat on a clean surface. Place one slice of provolone cheese on each piece of beef. Spoon a small amount of the sautéed pepper and onion mixture onto each slice, then carefully roll them up tightly to enclose the filling.
- Cook the Roll Ups: Arrange the roll-ups seam side down in the skillet or place them on a parchment-lined baking sheet. Heat over medium heat on the stovetop or bake in a preheated oven at 375°F (190°C) for 8–10 minutes, until the cheese is melted and the roll ups are heated through.
