Instructions
- Prepare the base: In a large skillet over medium heat, heat olive oil and butter until melted and hot.
- Sauté onions: Add the finely chopped onion and cook for 3 to 4 minutes until softened and translucent, stirring occasionally to prevent burning.
- Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, taking care not to let it brown.
- Cook mushrooms and season: Add the sliced mushrooms to the skillet along with salt, black pepper, and thyme. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms become tender and most of their liquid evaporates.
- Deglaze the pan: Pour in the vegetable broth or white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 to 3 minutes to reduce slightly.
- Add cream and cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Simmer gently for 3 to 5 minutes until the sauce thickens slightly, stirring occasionally.
- Final seasoning and serving: Taste the sauce and adjust seasoning if needed. Garnish with chopped fresh parsley if desired and serve warm.
