Cowboy Caviar Mix
- 1 can (15 oz) low-sodium black beans, rinsed and drained
- 1 cup sweet corn (fresh or frozen)
- 1 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare Ingredients: Dice the avocados and in a large bowl, combine the rinsed black beans, corn, diced cherry tomatoes, finely chopped red onion, and chopped fresh cilantro.
- Season Mixture: Drizzle the fresh lime juice and olive oil over the combined ingredients, then season with salt and pepper to taste. Toss gently to mix well without mashing the ingredients.
- Prep Avocados: Cut each avocado in half and carefully remove the pit. If needed, scoop out some avocado flesh to create a hollow suitable for stuffing.
- Stuff Avocados: Generously fill each avocado half with the cowboy caviar mixture, mounding it nicely for a visually appealing presentation.
- Serve: Arrange the stuffed avocados on a serving platter and enjoy immediately, optionally accompanied by tortilla chips for added crunch and flavor.
