Description

Delightfully crisp fortune cookies filled with a creamy peanut butter mixture and coated in smooth melted semisweet chocolate. These Chocolate-Peanut Butter Covered Fortune Cookies offer a perfect balance of sweet and nutty flavors, making them a fun and elegant treat for parties or snack time.

Ingredients

Scale

For the Peanut Butter Filling

  • 12-15 plain fortune cookies (store-bought or homemade)
  • ½ cup creamy peanut butter
  • 2 tbsp powdered sugar
  • 2 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

For the Chocolate Coating

  • 8 oz semisweet chocolate, chopped (or chocolate chips)
  • 1 tbsp coconut oil (or vegetable oil, for smooth melting)

Instructions

  1. Prepare the Peanut Butter Filling: In a small bowl, mix together the creamy peanut butter, powdered sugar, softened butter, vanilla extract, and salt (if using) until smooth and well combined.
  2. Transfer to Piping Bag: Transfer the peanut butter mixture to a piping bag or a plastic sandwich bag with the tip cut off for easy filling.
  3. Fill the Fortune Cookies: Carefully open the fortune cookies without breaking them. Pipe a small amount of the peanut butter mixture into the center of each cookie, then gently press the cookie back together, ensuring the filling is contained inside.
  4. Place Filled Cookies on Tray: Arrange the filled fortune cookies on a parchment-lined baking sheet or tray.
  5. Melt the Chocolate Coating: In a microwave-safe bowl, melt the semisweet chocolate and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted. Alternatively, melt the chocolate using a double boiler method.
  6. Coat the Fortune Cookies: Using a fork or tongs, dip each filled fortune cookie into the melted chocolate, making sure it’s fully coated. Gently tap the cookie against the side of the bowl to remove any excess chocolate.
  7. Place Coated Cookies Back on Tray: Return the coated fortune cookies to the parchment paper-lined tray. Repeat with the remaining cookies.
  8. Chill and Set: Refrigerate the cookies for 20-30 minutes or until the chocolate is firm and set.
  9. Serve: Once hardened, enjoy your Chocolate-Peanut Butter Covered Fortune Cookies. Optionally, drizzle with extra melted chocolate or sprinkle crushed peanuts on top for added flair.

Notes

  • Carefully open fortune cookies to avoid breaking them while filling.
  • If you prefer, use vegetable oil instead of coconut oil to melt chocolate.
  • For extra decoration, drizzle additional melted chocolate or add crushed peanuts on top after dipping.
  • Store finished cookies in an airtight container in the refrigerator to keep the chocolate coating firm.
  • Allow cookies to come to room temperature slightly before serving for best flavor.
