Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to get it ready for baking the egg mixture.
- Sauté Veggies: In a skillet, melt the butter over medium heat and sauté the sliced mushrooms and diced bell peppers with salt and pepper until tender, about 5-7 minutes.
- Prepare Eggs: Crack the eggs into a large mixing bowl and whisk them thoroughly until well combined and slightly frothy.
- Add Ingredients: To the whisked eggs, add the cottage cheese and the sautéed mushrooms and bell peppers. Stir everything together until evenly mixed.
