Description

A comforting and creamy cheesy potato chicken bake featuring tender chicken breast, boiled potatoes, and a rich blend of cottage cheese, sour cream, and melted cheddar. Perfect for a satisfying weeknight dinner, this dish combines simple ingredients baked together until bubbly and golden.

Ingredients

Scale

Chicken and Vegetables

  • 1 lb chicken breast or strips, thawed and/or uncooked
  • 4 medium potatoes, peeled and cubed
  • 1 large onion, diced

Dairy and Cheese

  • 2 cups cottage cheese
  • 1 cup sour cream
  • 1/2 cup parmesan cheese
  • 1 cup cheddar cheese

Seasonings and Herbs

  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C). Lightly coat a 13×9-inch or 3-quart baking dish with cooking spray or butter to prevent sticking.
  2. Boil potatoes: Peel and cube the potatoes, then place them in heavily salted boiling water. Boil for about 10 minutes or until just tender. Drain thoroughly and set aside to cool slightly.
  3. Prepare chicken: Cut the chicken breast into 1-inch pieces and set aside.
  4. Mix dairy and seasonings: In a large bowl, combine the diced onion, cottage cheese, sour cream, parmesan cheese, chopped parsley, cayenne, salt, and black pepper. Stir well until fully incorporated.
  5. Combine all ingredients: Add the chicken pieces and boiled potatoes to the cheese and seasoning mixture. Gently stir until everything is evenly coated and combined.
  6. Assemble the bake: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the top with shredded cheddar cheese.
  7. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, until the cheese on top is bubbly and golden brown. Remove from the oven and let it rest a few minutes before serving.

Notes

  • Use unsalted or lightly salted cottage cheese to better control the dish’s saltiness if desired.
  • Substitute chicken breast with cooked shredded chicken for a quicker assembly.
  • Adjust cayenne pepper quantity to control the heat level according to your preference.
  • For a richer flavor, you may add a tablespoon of butter on top before baking.
  • Serve with a side salad or steamed vegetables for a complete meal.
