- 1 cup cheddar cheese

- 1/4 cup fresh parsley, chopped

Instructions
- Preheat oven and prepare dish: Preheat your oven to 375°F (190°C). Lightly coat a 13×9-inch or 3-quart baking dish with cooking spray or butter to prevent sticking.
- Boil potatoes: Peel and cube the potatoes, then place them in heavily salted boiling water. Boil for about 10 minutes or until just tender. Drain thoroughly and set aside to cool slightly.
- Prepare chicken: Cut the chicken breast into 1-inch pieces and set aside.
- Mix dairy and seasonings: In a large bowl, combine the diced onion, cottage cheese, sour cream, parmesan cheese, chopped parsley, cayenne, salt, and black pepper. Stir well until fully incorporated.
- Combine all ingredients: Add the chicken pieces and boiled potatoes to the cheese and seasoning mixture. Gently stir until everything is evenly coated and combined.
