Instructions
- Prepare the cereal: In a large bowl, add the 6 cups of Rice Chex cereal and set it aside to be coated later.
- Melt chocolate mixture: In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips, 1/2 cup creamy peanut butter, and 1/4 cup unsalted butter. Microwave in 30-second intervals, stirring thoroughly between each, until the mixture is fully melted and smooth.
- Add flavorings: Stir in 1 teaspoon vanilla extract and a pinch of salt into the melted chocolate mixture to enhance the flavor.
- Coat the cereal: Pour the chocolate mixture over the Rice Chex cereal. Using a spatula or spoon, gently stir to evenly coat all the cereal pieces with the chocolate mixture.
- Combine coating mixture: In a large zip-top bag or sealable container, combine 1 1/2 cups dry brownie mix and 1/2 cup powdered sugar. This will be the dry coating for the cereal.
